We only buy our fish from suppliers that are within the Icelandic Responsible Fisheries chain of custody. Iceland waters produce some of the best seafood in the World, while also having one of the strictest fishing quotas in the world, which keeps their fishing sustainable. With the help from our suppliers, we strive to source the best quality potatoes from around the country. We use sausages from Lishman’s of Ilkley, who source their pork from high welfare animals in Yorkshire farms.
